Chicken, Feta Cheese & Olives

  • 28 oz chicken breast boneless, skinless
  • ½ cup sweet red pepper
  • ½ cup sweet green pepper
  • 1 sweet yellow pepper
  • 1 cup chicken stock unsalted
  • 1 large onion
  • 2 tomatoes
  • 1 tsp granulated sugar
  • ¼ tsp oregano dried, ground
  • ¼ cup olive oil extra virgin
  • black pepper ground
  • ¼ cup basil fresh whole leaves
  • ¾ cup feta cheese cubed or crumbled
  • 10 kalamata olives


  • Cut the peppers and onion in slices.
  • Cut the tomatoes into small cubes and remove the seeds.
  • Saute the chicken in 2 tbsp olive oil.
  • Remove from pan.
  • Add the peppers and onions and saute about 2 minutes and then add the chicken back.
  • Add the stock, tomatoes, sugar, oregano, black pepper, and let cook for about 35 minutes.
  • Add the kalamata olives and feta cheese and cover the pan for 5 minutes.
  • Serve with fresh basil and olive oil.
