Chicken, Feta Cheese & Olives

Ingredients
- 28 oz chicken breast boneless, skinless
- ½ cup sweet red pepper
- ½ cup sweet green pepper
- 1 sweet yellow pepper
- 1 cup chicken stock unsalted
- 1 large onion
- 2 tomatoes
- 1 tsp granulated sugar
- ¼ tsp oregano dried, ground
- ¼ cup olive oil extra virgin
- ⅛ black pepper ground
- ¼ cup basil fresh whole leaves
- ¾ cup feta cheese cubed or crumbled
- 10 kalamata olives
Instructions
- Cut the peppers and onion in slices.
- Cut the tomatoes into small cubes and remove the seeds.
- Saute the chicken in 2 tbsp olive oil.
- Remove from pan.
- Add the peppers and onions and saute about 2 minutes and then add the chicken back.
- Add the stock, tomatoes, sugar, oregano, black pepper, and let cook for about 35 minutes.
- Add the kalamata olives and feta cheese and cover the pan for 5 minutes.
- Serve with fresh basil and olive oil.
