Cuban Fricase de Pollo

Ingredients
- 1 lb chicken breast boneless, skinless
- 1 lb chicken dark meat
- 1 tsp oregano dried, ground
- 1 tsp cumin ground
- 1 tsp olive oil extra virgin
- 6 cloves garlic
- 1 medium onion
- 1 sweet green pepper large
- 1 sweet red pepper large
- 6 oz tomato paste
- 1 tsp bay leaf dried
- 1 tbsp herbes de provence salt free
- 2 cup chicken stock unsalted
- 2 oz pimento stuffed olives
- 3 carrot large
- 1 cup white wine
- 1 tsp sea salt
- 1 tsp black pepper ground
Instructions
- In a small bowl combine salt, pepper, oregano and ½ tsp of cumin.
- Stir and rub the chicken with the mixture.
- Heat 3 tbsp olive oil over medium-low heat.
- Add onions and bell peppers.
- Cover and sweat the veggies.
- Add remaining olive oil and garlic.
- Stir, then add remaining cumin.
- Put the veggie mix in a stock pot with the chicken.
- Add tomato paste, bay leaf, Herbes De Provence, and enough chicken stock to cover.
- Cook 45 minutes over medium heat.
- Add the olives, carrots, and wine.
- Cook another 30 minutes and serve.
