Mediterranean Lamb Stew

Ingredients
- 1 ¼ lb lamb shoulder arm, raw
- 3 tbsp olive oil extra virgin
- 1 medium onion
- 2 medium carrots
- 1 cup celery chopped
- 3 cloves garlic
- 1 tsp bay leaf dried
- 5 leaf thyme fresh
- 2 cups chicken broth low salt
- 1 cup tomato puree no salt
- 15 oz garbanzo beans
- 10 oz spinach
- 10 kalamata olives
- ¼ tsp black pepper ground
- 1 lemon
Instructions
- Lightly salt the lamb on all sides.
- Heat the oil in a large pot and brown the lamb on all sides.
- Remove the lamb to a plate.
- Lower the heat to medium and add the onion and carrots.
- Cook until fragrant and translucent, about 5 minutes.
- Add garlic and cook until fragrant.
- Add the lamb back and the bay leaves, thyme, broth and tomato puree.
- Reduce heat to medium-low and simmer covered for 1 hour.
- Add garbanzo beans, olives, and spinach.
- Cover and cook another 10 minutes to heat the beans and olives.
- Serve.
