Mediterranean Lamb Stew

Ingredients

  • 1 ¼ lb lamb shoulder arm, raw
  • 3 tbsp olive oil extra virgin
  • 1 medium onion
  • 2 medium carrots
  • 1 cup celery chopped
  • 3 cloves garlic
  • 1 tsp bay leaf dried
  • 5 leaf thyme fresh
  • 2 cups chicken broth low salt
  • 1 cup tomato puree no salt
  • 15 oz garbanzo beans
  • 10 oz spinach
  • 10 kalamata olives
  • ¼ tsp black pepper ground
  • 1 lemon

Instructions

  • Lightly salt the lamb on all sides.
  • Heat the oil in a large pot and brown the lamb on all sides.
  • Remove the lamb to a plate.
  • Lower the heat to medium and add the onion and carrots.
  • Cook until fragrant and translucent, about 5 minutes.
  • Add garlic and cook until fragrant.
  • Add the lamb back and the bay leaves, thyme, broth and tomato puree.
  • Reduce heat to medium-low and simmer covered for 1 hour.
  • Add garbanzo beans, olives, and spinach.
  • Cover and cook another 10 minutes to heat the beans and olives.
  • Serve.
