Black Quinoa Asian Slaw

  • 8 oz quinoa grain
  • 2 cups water
  • 2 cups red cabbage shredded
  • 1 cup sugar snap peas
  • 1 cup carrot
  • 1 cup green onion scallion
  • 1 mango
  • ½ cup cilantro
  • 1 tbsp sesame seed


  • Rinse quinoa under cold water until water runs clear.
  • Place quinoa in boiling water and simmer for 12-15 minutes.
  • In a large bowl combine black quinoa, red cabbage, snap peas, carrots, scallions, mango, and cilantro.
  • Fold in dressing (suggest Asian flavored dressing) and let chill in fridge.
  • When ready to serve, garnish with toasted sesame seeds.
  • Try different colored quinoa – red, white or black.
