- 2 tbsp olive oil extra virgin (try garlic flavored)
- 36 oz fresh sardines
- salt & pepper to taste
- Preheat broiler on high. Brush the boiler rack with some of the olive oil.
- Clean the sardines, removing scales, head, guts and backbone.
- Brush the sardines with oil and arrange on the broiler rack.
- Sprinkle with salt and pepper to taste.
- Broil about 4 inches from the heat for about 3 minutes.
- Turn the sardines over, brush with oil and broil another 2-3 minutes.
