  • 3 red peppers medium
  • ½ cup olive oil extra virgin
  • 2 tbsp lemon juice
  • 5 tbsp red wine vinegar
  • 2 cloves garlic
  • 1 tsp paprika
  • 1 serving red chili flakes
  • 1 tsp sugar
  • 2 tbsp capers
  • 7 oz canned tuna in oil



  • Preheat broiler to high.
  • Cook the peppers under the broilder, turning frequently, for 10 minutes until skin is blistered and black.
  • Transfer to a plastic bag, tie the top and let cool.


  • Whisk the olive oil, lemon juice, vinegar, garlic, paprika, chili flakes, and sugar together.


  • When peppers are cool enough to handle, remove and peel off the skins.
  • Cut the flesh into thirds length wise.
  • Place in nonmetallic dish, pour the dressing over the peppers and let stand for 30 minutes.


  • Mix the capers with the tuna.
  • Drain pepper pieces, reserving the dressing.
  • Divide the tuna between the pepper pieces and roll up securing with a toothpick.


  • Spoon over the dressing and serve.
