Chicken In Spinach Mustard Sauce

Ingredients
- 1 lb chicken thighs skinless
- 2 tsp bay leaf dried
- 1 tsp cardamom ground
- ½ tsp cinnamon ground
- 1 tsp cloves ground
- 2 serrano peppers
- 2 hot chili peppers
- ⅓ cup plain, non-fat yogurt
- ¼ tsp red/cayenne pepper
- 2 tsp ginger root raw
- ¼ cup cilantro
- ¼ cup water
- 8 oz spinach
- ¼ cup mustard grainy, no salt added
- ¼ cup olive oil extra virgin
Instructions
- Heat the oil over medium-high heat.
- Add the bay leaves, cardamon, cinnamon, cloves and hot chili pepper.
- Cook 1 minute.
- Add chicken and brown both sides, 3 minutes per side.
- Reduce heat to medium-low.
- Add yogurt, cayenne and salt and pepper to taste.
- Simmer 10 minutes.
- In a blender, combine ginger, serrano peppers, cilantro and water.
- Blend until smooth.
- Add spinach and mustard.
- Pulse to combine.
- Add this sauce to chicken and simmer another 10 minutes.
