Chicken In Spinach Mustard Sauce

  • 1 lb chicken thighs skinless
  • 2 tsp bay leaf dried
  • 1 tsp cardamom ground
  • ½ tsp cinnamon ground
  • 1 tsp cloves ground
  • 2 serrano peppers
  • 2 hot chili peppers
  • cup plain, non-fat yogurt
  • ¼ tsp red/cayenne pepper
  • 2 tsp ginger root raw
  • ¼ cup cilantro
  • ¼ cup water
  • 8 oz spinach
  • ¼ cup mustard grainy, no salt added
  • ¼ cup olive oil extra virgin


  • Heat the oil over medium-high heat.
  • Add the bay leaves, cardamon, cinnamon, cloves and hot chili pepper.
  • Cook 1 minute.
  • Add chicken and brown both sides, 3 minutes per side.
  • Reduce heat to medium-low.
  • Add yogurt, cayenne and salt and pepper to taste.
  • Simmer 10 minutes.
  • In a blender, combine ginger, serrano peppers, cilantro and water.
  • Blend until smooth.
  • Add spinach and mustard.
  • Pulse to combine.
  • Add this sauce to chicken and simmer another 10 minutes.
