  • 1 cup red onion
  • 4 cups carrots
  • 1 tbsp olive oil extra virgin
  • tsp allspice
  • ¼ cup raisins
  • ¼ cup walnut chopped
  • 2 tbsp lemon juice


  • Heat oven to 425°F.
  • Roast carrots for 10 minutes.
  • Soak ¼ cup raisins in ¼ cup water.
  • Add the raisins and ¼ cup chopped walnuts.
  • Continue roasting 10 more minutes.
  • Toss with the juice from 1 lemon.
  • Add cilantro and dill if desired.
  • Salt and pepper to taste.
