Ingredients
- 1 cucumber
- 1 red pepper medium
- 1 yellow pepper large
- 1 pint tomato cherry
- ½ cup red onion
- ½ lb feta cheese
- 3 oz kalamata olives
Instructions
- Place the cucumber, peppers, tomatoes and red onion in a large bowl.
- Pour the vinaigrette (Vinaigrette by Ina Garten) over the vegetables.
- Add the feta and olives and toss lightly.
- Set aside for 30 minutes to allow the flavors to blend.
- Serve at room temperature.
