Spicy Eggplant With Garlic

  • 2 eggplants
  • ¼ cup chicken broth low salt
  • 1 tbsp soy sauce reduced sodium
  • 1 tbsp balsamic vinegar
  • 1 tbsp chili oil
  • ¼ tsp crushed red pepper flakes
  • 2 tbsp olive oil extra virgin
  • 2 spring onions or scallions medium
  • 1 tbsp ginger root
  • 2 cloves garlic


  • Mix chicken broth, soy sauce, vinegar, chili oil, and red pepper flakes and set aside.
  • Heat a wok and add olive oil to coat.
  • Add eggplants and stir-fry 2-3 minutes until outsides are golden brown.
  • Turn heat to medium-high and add scallions, ginger, and garlic.
  • Stir-fry 30 seconds and add the broth mixture.
  • Simmer the vegetables for 2 to 3 minutes as the eggplant absorbs the sauce.
